  • 5–6 tablespoons flour
  • Salt, to taste
  • Black pepper, to taste
  • Dried basil, to taste
  • Red pepper flakes, to taste
  • Grated Parmesan cheese (for topping)
  • Vegetable oil (for frying)

Instructions

  • Prepare the Vegetables

    • Slice the zucchini and tomatoes into thin rounds.
    • Season both with salt, black pepper, dried basil, and red pepper flakes to taste.
  • Heat the Oil

    • Heat a generous amount of vegetable oil in a large skillet over medium heat.
  • Coat and Fry the Zucchini

    • Place the flour in a shallow dish.
    • Lightly coat each zucchini slice with flour.
    • Fry the floured zucchini in the skillet in a single layer for about 2–3 minutes on each side until golden brown.
    • Remove and place on a plate lined with paper towels to absorb excess oil.
