- 2 cloves garlic (minced)
- 1 bell pepper (diced)
- 1 medium carrot (peeled, sliced)
- 14 oz canned diced tomatoes (with juices)
- 3 cups low-sodium chicken broth
Spices and Seasonings

- 1 tsp ground cumin
- 1 tbsp lime juice
- 2 tbsp fresh cilantro (chopped, optional)
- Salt and pepper, to taste
Optional Additions
- 1–2 fresh chili peppers (finely chopped)
- Lime wedges for garnish
Instructions
- Prepare the Ingredients:
Chop the onion, garlic, bell pepper, and carrot. Peel and devein the shrimp, then pat them dry. - Cook the Soup Base:
In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for 2–3 minutes until softened. Add garlic, bell pepper, and carrot; cook for another 3–4 minutes until vegetables soften. - Add the Tomatoes and Broth:
Stir in the canned diced tomatoes and chicken broth. Bring to a simmer over medium-high heat. - Season the Soup:
Add chili powder, smoked paprika, cayenne pepper, cumin, salt, and pepper. Simmer for 5–6 minutes for the flavors to meld. - Cook the Shrimp:
Add the shrimp to the pot, stirring to coat them in the broth. Cook for 3–4 minutes, or until the shrimp are pink and opaque. - Finish the Soup:
Stir in lime juice. Taste the soup and adjust seasoning, adding more salt, pepper, or cayenne if needed. - Serve and Garnish:
Ladle the soup into bowls and garnish with chopped cilantro and lime wedges for extra zest.
Notes
- Adjust the heat by reducing or omitting cayenne pepper and chili peppers for a milder version.
- Fresh, high-quality shrimp will enhance the flavor of the soup. If using frozen shrimp, ensure they are fully thawed.
- Feel free to add extra vegetables like zucchini or spinach for added nutrition and variety.
