Description

Quick and Spicy Shrimp Soup is a zesty, protein-packed delight that’s ready in under 30 minutes. With tender shrimp, fresh vegetables, and bold spices in a flavorful broth, this soup is the perfect comfort meal for busy nights.

Ingredients

Main Ingredients

  • 1 lb medium shrimp (peeled, deveined)
  • 1 tbsp olive oil
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 bell pepper (diced)
  • 1 medium carrot (peeled, sliced)
  • 14 oz canned diced tomatoes (with juices)
  • 3 cups low-sodium chicken broth

Spices and Seasonings

  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 1 tsp ground cumin
  • 1 tbsp lime juice
  • 2 tbsp fresh cilantro (chopped, optional)
  • Salt and pepper, to taste

Optional Additions

  • 12 fresh chili peppers (finely chopped)
  • Lime wedges for garnish

Instructions

  • Prepare the Ingredients:
Chop the onion, garlic, bell pepper, and carrot. Peel and devein the shrimp, then pat them dry.
  • Cook the Soup Base:
In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for 2–3 minutes until softened. Add garlic, bell pepper, and carrot; cook for another 3–4 minutes until vegetables soften.
  • Add the Tomatoes and Broth:
Stir in the canned diced tomatoes and chicken broth. Bring to a simmer over medium-high heat.
  • Season the Soup:
Add chili powder, smoked paprika, cayenne pepper, cumin, salt, and pepper. Simmer for 5–6 minutes for the flavors to meld.
  • Cook the Shrimp:
Add the shrimp to the pot, stirring to coat them in the broth. Cook for 3–4 minutes, or until the shrimp are pink and opaque.
  • Finish the Soup:
Stir in lime juice. Taste the soup and adjust seasoning, adding more salt, pepper, or cayenne if needed.
  • Serve and Garnish:
Ladle the soup into bowls and garnish with chopped cilantro and lime wedges for extra zest.

Notes

  • Adjust the heat by reducing or omitting cayenne pepper and chili peppers for a milder version.
  • Fresh, high-quality shrimp will enhance the flavor of the soup. If using frozen shrimp, ensure they are fully thawed.
  • Feel free to add extra vegetables like zucchini or spinach for added nutrition and variety.
