Ingredients

Main Dish

  • 500g cabbage, finely shredded
  • 1 carrot, grated
  • 2 onions, diced
  • 3 cloves of garlic, minced
  • 3 eggs
  • 4 tablespoons of flour (60g)
  • 1 teaspoon of salt
  • 1 teaspoon of paprika
  • 1 teaspoon of black pepper
  • Vegetable oil, for cooking

Yogurt Sauce

  • 3 tablespoons Greek yogurt
  • 2 sprigs of dill, finely chopped
  • 1 grated pickled cucumber
  • 1 clove of garlic, minced
  • 1/3 teaspoon paprika

Instructions

  1. Prepare the Vegetables: Finely shred the cabbage and grate the carrot. Dice the onions and mince the garlic for a burst of flavor.
  2. Cook the Vegetables: Heat a splash of vegetable oil in a large skillet over medium heat. Sauté the onions and garlic until fragrant and translucent (about 3–4 minutes). Add the shredded cabbage and grated carrot. Cook, stirring occasionally, until the vegetables are tender and slightly caramelized.
  3. Make the Batter: In a large bowl, beat the eggs lightly. Add the flour, salt, paprika, and black pepper to the eggs. Whisk until smooth. Combine the cooked vegetables with the batter, ensuring the mixture is well-coated.
  4. Cook the Cabbage Mixture: Heat more vegetable oil in the skillet over medium heat. Pour the cabbage mixture into the skillet, spreading it evenly like a thick pancake. Cook for 5–7 minutes, or until the bottom is golden brown. Flip carefully and cook for another 5–7 minutes, until the other side is golden and the dish is cooked through.
  5. Prepare the Yogurt Sauce: In a small bowl, combine the Greek yogurt, dill, grated pickled cucumber, minced garlic, and paprika. Stir until smooth and creamy.
  6. Serve: Remove the cooked cabbage dish from the skillet and let it cool slightly. Cut into portions and serve warm with the yogurt sauce drizzled on top or on the side for dipping.

  • To make the dish gluten-free, substitute the flour with almond or oat flour.
