This Quick Guacamole Quinoa Salad is a fresh and vibrant dish perfect for a light lunch or as a side at your next gathering.
Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 1 ripe avocado, diced
- 1 medium tomato, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it cool.
- In a large bowl, combine the diced avocado, tomato, red onion, and cilantro.
- Once the quinoa has cooled, add it to the bowl with the avocado mixture.
- Squeeze the lime juice over the salad and sprinkle in the garlic powder, cumin, salt, and pepper. Gently toss everything together until well combined.
- Serve immediately or chill in the refrigerator for about 30 minutes to let the flavors meld.
Notes
- For added flavor, try adding diced jalapeños for a spicy kick.
- Substitute black beans for extra protein.
- You can also use lemon juice instead of lime for a different citrus flavor.
