Description

A delightful and indulgent dessert that layers graham cracker crust, cream cheese, fresh raspberries, chocolate pudding, and whipped topping.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup powdered sugar
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 2 cups whipped topping (like Cool Whip)
  • 1 cup fresh raspberries (plus extra for garnish)
  • 1 cup chocolate pudding mix
  • 2 3/4 cups milk
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined. Press the mixture into the bottom of a 9×13 inch baking dish to form a crust.
  2. In a large bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Fold in 1 cup of whipped topping until well combined. Spread this mixture evenly over the graham cracker crust.
  3. Scatter fresh raspberries over the cream cheese layer.
  4. In another bowl, whisk together the chocolate pudding mix and milk until thickened, about 2 minutes. Spread the chocolate pudding evenly over the raspberry layer.
  5. Top the chocolate pudding layer with the remaining whipped topping.
  6. Melt the semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Drizzle the melted chocolate over the top of the dessert.
  7. Refrigerate the dessert for at least 4 hours, or overnight for best results, to allow the layers to set properly.
  8. Before serving, garnish with additional fresh raspberries if desired.

Notes

  • For a lighter version, substitute the cream cheese with Greek yogurt and use sugar-free pudding mix.
