Description
Delicious raspberry cinnamon rolls that are soft, fluffy, and topped with a sweet glaze.
Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon instant yeast
- 1/2 teaspoon salt
- 1/2 cup whole milk, warmed
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- For the filling:
- 1/2 cup fresh raspberries (or frozen, thawed)
- 1/4 cup brown sugar
- 1 tablespoon ground cinnamon
- 2 tablespoons unsalted butter, softened
- For the glaze:
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- In a large mixing bowl, combine the flour, granulated sugar, instant yeast, and salt.
- In a separate bowl, whisk together the warmed milk, melted butter, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
- Preheat your oven to 350°F (175°C).
- Roll out the risen dough on a floured surface into a rectangle about 1/4 inch thick.
- Spread the softened butter over the dough, then sprinkle the brown sugar and cinnamon evenly on top.
- Distribute the raspberries over the filling, pressing them gently into the sugar mixture.
- Starting from one long side, roll the dough tightly into a log. Cut the log into 8 equal pieces.
- Place the rolls in a greased baking dish, cover with a towel, and let rise for another 30 minutes.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- While the rolls are baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth.
- Once the rolls are done, let them cool slightly before drizzling the glaze over the top.
Notes
- For a richer flavor, try adding a pinch of nutmeg to the filling.
- You can substitute the raspberries with blueberries or strawberries for a different fruit twist.
- For an extra indulgent treat, serve warm with a scoop of vanilla ice cream on the side.
