Description

Delicious raspberry cinnamon rolls that are soft, fluffy, and topped with a sweet glaze.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon instant yeast
  • 1/2 teaspoon salt
  • 1/2 cup whole milk, warmed
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • For the filling:
  • 1/2 cup fresh raspberries (or frozen, thawed)
  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, softened
  • For the glaze:
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, combine the flour, granulated sugar, instant yeast, and salt.
  2. In a separate bowl, whisk together the warmed milk, melted butter, egg, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  4. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Preheat your oven to 350°F (175°C).
  7. Roll out the risen dough on a floured surface into a rectangle about 1/4 inch thick.
  8. Spread the softened butter over the dough, then sprinkle the brown sugar and cinnamon evenly on top.
  9. Distribute the raspberries over the filling, pressing them gently into the sugar mixture.
  10. Starting from one long side, roll the dough tightly into a log. Cut the log into 8 equal pieces.
  11. Place the rolls in a greased baking dish, cover with a towel, and let rise for another 30 minutes.
  12. Bake in the preheated oven for 20-25 minutes or until golden brown.
  13. While the rolls are baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth.
  14. Once the rolls are done, let them cool slightly before drizzling the glaze over the top.

Notes

  • For a richer flavor, try adding a pinch of nutmeg to the filling.
  • You can substitute the raspberries with blueberries or strawberries for a different fruit twist.
  • For an extra indulgent treat, serve warm with a scoop of vanilla ice cream on the side.
