Description
Raspberry Lemon Bars are a deliciously tangy treat that combines the tartness of fresh raspberries with the zesty flavor of lemon, all nestled in a buttery crust.
Ingredients
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 teaspoon lemon zest
- 1/2 cup fresh raspberries (or frozen, thawed)
- 1 tablespoon cornstarch
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 350°F. Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
- In a medium bowl, mix together the flour, powdered sugar, and salt. Add the softened butter and blend until the mixture resembles coarse crumbs. Press this mixture evenly into the bottom of the prepared baking dish to form the crust.
- Bake the crust in the preheated oven for 15 minutes, or until lightly golden.
- While the crust is baking, in a separate bowl, whisk together the eggs, granulated sugar, lemon juice, and lemon zest until well combined. In another small bowl, toss the raspberries with cornstarch to coat them lightly. Gently fold the raspberries into the lemon mixture.
- Once the crust is done baking, remove it from the oven and pour the lemon-raspberry mixture over the hot crust. Return to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly firm to the touch.
- Allow the bars to cool in the pan on a wire rack. Once cooled, refrigerate for at least 2 hours to set completely. Cut into squares and dust with powdered sugar before serving.
Notes
- For a twist, try adding a teaspoon of vanilla extract to the lemon mixture for extra flavor.
- You can also substitute the raspberries with blueberries or strawberries for a different fruity variation.
