Description

A delicious and easy recipe for ravioli tossed with fresh tomatoes, asparagus, garlic, and herbs.


Ingredients

  • 8 ounces fresh or frozen cheese ravioli
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup asparagus, trimmed and cut into 1-inch pieces
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)
  • Parmesan cheese, grated (for serving)

Instructions

  1. Cook the ravioli according to package instructions. Drain and set aside, reserving a little pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the cherry tomatoes and asparagus to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes are soft and the asparagus is tender.
  4. Stir in the dried oregano, dried basil, salt, and pepper. If the mixture seems dry, add a splash of the reserved pasta water.
  5. Gently fold the cooked ravioli into the skillet, mixing everything together until the ravioli are well coated with the sauce.
  6. Serve immediately, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese.

Notes

  • For added protein, consider adding cooked chicken or shrimp to the dish.
