A delicious and easy recipe for ravioli tossed with fresh tomatoes, asparagus, garlic, and herbs.
Ingredients
- 8 ounces fresh or frozen cheese ravioli
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup asparagus, trimmed and cut into 1-inch pieces
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
- Parmesan cheese, grated (for serving)
Instructions
- Cook the ravioli according to package instructions. Drain and set aside, reserving a little pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the cherry tomatoes and asparagus to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes are soft and the asparagus is tender.
- Stir in the dried oregano, dried basil, salt, and pepper. If the mixture seems dry, add a splash of the reserved pasta water.
- Gently fold the cooked ravioli into the skillet, mixing everything together until the ravioli are well coated with the sauce.
- Serve immediately, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese.
Notes
- For added protein, consider adding cooked chicken or shrimp to the dish.
- Swap out the asparagus for spinach or zucchini for a different flavor and texture.
