Description

A refreshing and nutritious raw beet salad featuring the vibrant flavors of apples and carrots, perfect for a light meal or side dish.

Ingredients

  • 2 medium raw beets, peeled and grated
  • 1 large apple, cored and grated (preferably a tart variety like Granny Smith)
  • 2 medium carrots, peeled and grated
  • 1/4 cup chopped fresh parsley
  • 1/4 cup walnuts, chopped (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey (or maple syrup for a vegan option)
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the grated beets, grated apple, grated carrots, and chopped parsley. If using walnuts, add them to the mixture as well.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.
  3. Pour the dressing over the beet mixture and toss gently until everything is evenly coated.
  4. Let the salad sit for at least 15 minutes to allow the flavors to meld. For best results, refrigerate for 30 minutes before serving.
  5. Serve chilled or at room temperature.

Notes

  • For added flavor, consider adding crumbled feta cheese or goat cheese on top before serving.
  • Substitute the walnuts with sunflower seeds or pumpkin seeds for a nut-free option.
