Ingredients
- 2 medium raw beets, peeled and grated
- 1 large apple, cored and grated (preferably a tart variety like Granny Smith)
- 2 medium carrots, peeled and grated
- 1/4 cup chopped fresh parsley
- 1/4 cup walnuts, chopped (optional)
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey (or maple syrup for a vegan option)
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the grated beets, grated apple, grated carrots, and chopped parsley. If using walnuts, add them to the mixture as well.
- In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.
- Pour the dressing over the beet mixture and toss gently until everything is evenly coated.
- Let the salad sit for at least 15 minutes to allow the flavors to meld. For best results, refrigerate for 30 minutes before serving.
