Description
A delicious and visually stunning Red Velvet Strawberry Cheesecake that combines the rich flavors of red velvet cake with creamy cheesecake and fresh strawberries.
Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 3 large eggs
- 1/2 cup buttermilk
- 2 tablespoons cocoa powder
- 1 tablespoon red food coloring
- 1 cup fresh strawberries, sliced
- 1/4 cup strawberry jam
Instructions
- Preheat the oven to 325°F.
- In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
- Add the sour cream, eggs, buttermilk, cocoa powder, and red food coloring to the cream cheese mixture. Beat on low speed until fully incorporated and smooth, being careful not to overmix.
- Pour the red velvet cheesecake batter over the cooled crust in the springform pan. Bake for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour.
- Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
- Before serving, heat the strawberry jam in a small saucepan over low heat until melted. Drizzle the warm jam over the top of the cheesecake and arrange the sliced strawberries on top.
Notes
- For a lighter version, substitute low-fat cream cheese and Greek yogurt for the sour cream.
- To add a chocolate twist, mix in chocolate chips into the cheesecake batter before baking.
