Ingredients

  • ½ cup granulated sugar

  • 2 cups fresh rhubarb, chopped

  • 2 large eggs
  • 2 tablespoons all-purpose flour (for filling)
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
  2. In a medium bowl, combine 1 ½ cups flour, ½ cup sugar, and salt. Add the softened butter and mix until crumbly. Press this mixture evenly into the bottom of the prepared baking pan to form the crust.
