Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 cups rhubarb, chopped (fresh or frozen)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 teaspoon cinnamon (optional, for added flavor)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, salt, baking soda, and cinnamon (if using). Stir until well mixed.
  3. In another bowl, whisk together the melted butter, egg, vanilla extract, and buttermilk until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; a few lumps are okay.
  5. Fold in the chopped rhubarb and nuts (if using) until evenly distributed.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
