  • Author: Annabel
  • Total Time: 25 minutes
  • Yield: 9 pastry squares

Description

Looking for a quick and elegant dessert or snack? These Ricotta Chocolate Chip Pastry Squares combine flaky puff pastry, creamy ricotta, and decadent chocolate chips for a treat that’s as delightful to eat as it is to make. With just a handful of ingredients and a little effort, you can whip up these pastries for breakfast, brunch, or an indulgent dessert.

Ingredients

  • 1 puff pastry sheet, thawed
  • 9 tablespoons (135g) ricotta cheese
  • 9 tablespoons (126g) chocolate chips
  • 1 tablespoon coarse/turbinado/demerara sugar (or a pinch of sugar on each square)
  • 1 egg, whisked (for egg wash)

Instructions

1. Prepare Your Pastry

  • Thaw the puff pastry sheet according to the package directions.
  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Shape the Squares

  • Roll out the puff pastry on a lightly floured surface to smooth any creases.
  • Cut the pastry into 9 equal squares using a sharp knife or a pastry cutter.

3. Add the Ricotta and Chocolate

  • Place 1 tablespoon of ricotta cheese in the center of each square and spread it slightly, leaving a border.
  • Top each square with 1 tablespoon of chocolate chips, pressing them gently into the ricotta.

4. Optional Folding

  • For an open look, leave the pastry flat. For a decorative twist, fold the corners toward the center and pinch lightly.

5. Brush with Egg Wash

  • Lightly brush the edges of each square with the whisked egg to give the pastry a golden finish.

6. Sprinkle with Sugar

  • Add a small pinch of coarse sugar to the tops of the pastries for extra texture and sweetness.

7. Bake the Pastries

  • Place the pastries on the prepared baking sheet, spacing them out to allow for puffing.
  • Bake for 15-18 minutes, or until the pastry is golden and crisp.

8. Cool and Serve

  • Remove the pastries from the oven and let them cool slightly before serving. Enjoy warm or at room temperature.

Notes

  • Work with Cold Puff Pastry: Ensure the puff pastry stays cold while preparing the recipe. Warm pastry can become sticky and hard to handle. Chill it briefly if it softens too much during assembly.
  • Adjust Sweetness to Taste: If you prefer a sweeter treat, mix a small amount of powdered sugar into the ricotta cheese before assembling the pastries.
  • Store and Reheat: Store any leftovers in an airtight container at room temperature for up to 2 days. Reheat in the oven at 350°F (175°C) for a few minutes to restore crispness.
