Description

Crispy, caramelized, and packed with flavor, Roasted Brussels Sprouts with Garlic are the ultimate side dish! Perfectly seasoned with olive oil, garlic, and a sprinkle of Parmesan, these sprouts are easy to make and pair beautifully with just about any meal. Whether for a holiday feast or a quick weeknight dinner, this recipe will become your go-to!

Ingredients

  • 1 ½ pounds Brussels sprouts, trimmed and halved
  • 4 cloves garlic, roughly chopped
  • 1 ½ tablespoons extra-virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons freshly grated Parmesan cheese
  • Optional: lemon juice, balsamic vinegar, red pepper flakes, or fresh herbs for finishing

Instructions

1. Preheat the Oven
Preheat your oven to 400°F (200°C).

2. Prepare the Brussels Sprouts
Trim the ends off the Brussels sprouts and cut them in half lengthwise. Place the halved sprouts in a large mixing bowl.

3. Add Garlic and Seasonings
Add the roughly chopped garlic, olive oil, kosher salt, and black pepper to the bowl. Toss until the Brussels sprouts are evenly coated.

4. Arrange on a Baking Sheet
Spread the Brussels sprouts out in a single layer on a large baking sheet. Place the cut sides of the sprouts facing down to ensure even browning.

5. Roast
Roast in the preheated oven for 20-25 minutes, shaking the pan or stirring the sprouts halfway through to ensure even roasting.

6. Add Parmesan
During the last 5 minutes of roasting, sprinkle the grated Parmesan over the sprouts and return to the oven until the cheese melts and turns golden.

7. Optional Finishing Touches
Once roasted, drizzle the sprouts with lemon juice, balsamic vinegar, or sprinkle with red pepper flakes or fresh herbs for added flavor.

8. Serve and Enjoy
Transfer the Brussels sprouts to a serving dish and enjoy them warm.

Notes

  • Use Fresh Garlic: Chunky garlic pieces roast beautifully alongside the sprouts and add bursts of flavor.
  • Don’t Overcrowd the Pan: Ensure the Brussels sprouts have enough space to roast and crisp up instead of steaming.
  • Customize Your Toppings: Experiment with different flavor combinations, such as adding lemon zest, honey, or crumbled bacon.
  • Reheating Tips: Reheat leftover Brussels sprouts in a 375°F oven for 5-10 minutes to restore their crispness.
