Ingredients

  • 4 medium jalapeños (stems removed, halved, and seeded)
  • 1 tbsp olive oil
  • 4 oz cream cheese (room temperature)
  • ½ tsp garlic salt
  • ¼ tsp black pepper
  • ½ tsp onion powder
  • 1 cup mild cheddar cheese (shredded)
  • 6 strips bacon (cooked and crispy)
  • 4 slices Texas toast (or bread of choice)
  • 4 tbsp unsalted butter

Instructions

1. Roast the Jalapeños

  • Preheat oven to 425°F (218°C).
  • Line a baking sheet with parchment paper.
  • Brush both sides of the jalapeños with olive oil and place them cut-side down on the baking sheet.
  • Roast for 15 minutes, or until the skins start to char slightly.
  • Remove from oven and let cool before handling.

2. Make the Creamy Filling

  • In a bowl, mix cream cheese, garlic salt, black pepper, and onion powder until smooth.
  • Once the jalapeños are cool, chop them into small pieces and fold them into the cream cheese mixture.

3. Assemble the Sandwich

  • Butter one side of each slice of bread.
  • On the unbuttered side, spread half of the cream cheese mixture evenly.
  • Add 3 strips of crispy bacon and ½ cup of shredded cheddar cheese on top.
  • Place another slice of bread on top, butter side facing out. Repeat for the second sandwich.

4. Cook the Sandwich

  • Heat a skillet or griddle over medium heat.
  • Place the sandwich in the pan and cook for 3-5 minutes per side, pressing gently with a spatula, until the bread is golden brown and crispy, and the cheese is fully melted.

5. Serve & Enjoy!

  • Remove from the pan, let it rest for a minute, then slice in half.
