Ingredients
- 4 medium jalapeños (stems removed, halved, and seeded)
- 1 tbsp olive oil
- 4 oz cream cheese (room temperature)
- ½ tsp garlic salt
- ¼ tsp black pepper
- ½ tsp onion powder
- 1 cup mild cheddar cheese (shredded)
- 6 strips bacon (cooked and crispy)
- 4 slices Texas toast (or bread of choice)
- 4 tbsp unsalted butter
Instructions
1. Roast the Jalapeños
- Preheat oven to 425°F (218°C).
- Line a baking sheet with parchment paper.
- Brush both sides of the jalapeños with olive oil and place them cut-side down on the baking sheet.
- Roast for 15 minutes, or until the skins start to char slightly.
- Remove from oven and let cool before handling.
2. Make the Creamy Filling
- In a bowl, mix cream cheese, garlic salt, black pepper, and onion powder until smooth.
- Once the jalapeños are cool, chop them into small pieces and fold them into the cream cheese mixture.
3. Assemble the Sandwich
- Butter one side of each slice of bread.
- On the unbuttered side, spread half of the cream cheese mixture evenly.
- Add 3 strips of crispy bacon and ½ cup of shredded cheddar cheese on top.
- Place another slice of bread on top, butter side facing out. Repeat for the second sandwich.
4. Cook the Sandwich
- Heat a skillet or griddle over medium heat.
- Place the sandwich in the pan and cook for 3-5 minutes per side, pressing gently with a spatula, until the bread is golden brown and crispy, and the cheese is fully melted.
