Ingredients

  • 4 pieces salmon fillets (skin removed)
  • Salt and pepper, to taste
  • Butter for frying
  • 12 small tomatoes, halved
  • 2 cloves garlic, chopped
  • 400 g spinach
  • 1 tsp dried spring onions
  • 250 ml cream
  • 40 g shredded cheese
  • 1 tbsp grated Parmesan cheese
  • Spaghetti (cooked as per package instructions)

Instructions

Prepare the Ingredients

  1. Cook the spaghetti according to the package instructions. Drain and set aside.
  2. Season the salmon fillets with salt and pepper.

Cook the Salmon

  1. Heat a pat of butter in a large skillet over medium heat.
  2. Place the salmon fillets in the skillet and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove and set aside.

Sauté the Vegetables

  1. In the same skillet, melt more butter if necessary.
  2. Add the chopped garlic and halved tomatoes, sautéing for 2-3 minutes until the tomatoes soften.
  3. Add the spinach and cook until wilted, about 2-3 minutes. Season with dried spring onions, salt, and pepper.

Make the Creamy Sauce

  1. Pour in the cream and stir it into the vegetables.
  2. Gradually add the shredded cheese and Parmesan, stirring until the sauce is smooth and creamy. Let it simmer for 2 minutes to thicken slightly.

Combine and Serve

  1. Return the salmon to the skillet, spooning some of the sauce over the fillets.
  2. Serve the salmon and creamy vegetable mixture over a bed of cooked spaghetti.
  3. Garnish with additional Parmesan cheese and freshly ground black pepper, if desired.
