Ingredients
- 4 pieces salmon fillets (skin removed)
- Salt and pepper, to taste
- Butter for frying
- 12 small tomatoes, halved
- 2 cloves garlic, chopped
- 400 g spinach
- 1 tsp dried spring onions
- 250 ml cream
- 40 g shredded cheese
- 1 tbsp grated Parmesan cheese
- Spaghetti (cooked as per package instructions)
Instructions
Prepare the Ingredients
- Cook the spaghetti according to the package instructions. Drain and set aside.
- Season the salmon fillets with salt and pepper.
Cook the Salmon
- Heat a pat of butter in a large skillet over medium heat.
- Place the salmon fillets in the skillet and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove and set aside.
Sauté the Vegetables
- In the same skillet, melt more butter if necessary.
- Add the chopped garlic and halved tomatoes, sautéing for 2-3 minutes until the tomatoes soften.
- Add the spinach and cook until wilted, about 2-3 minutes. Season with dried spring onions, salt, and pepper.
Make the Creamy Sauce
- Pour in the cream and stir it into the vegetables.
- Gradually add the shredded cheese and Parmesan, stirring until the sauce is smooth and creamy. Let it simmer for 2 minutes to thicken slightly.
Combine and Serve
- Return the salmon to the skillet, spooning some of the sauce over the fillets.
- Serve the salmon and creamy vegetable mixture over a bed of cooked spaghetti.
