Description
Delicious and hearty saucy enchilada-style wet burritos filled with ground meat, refried beans, and topped with cheese and enchilada sauce.
Ingredients
- 1 pound ground beef or turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (15 ounces) refried beans
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- 1 can (10 ounces) red enchilada sauce
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- In a large skillet over medium heat, cook the ground beef or turkey until browned, breaking it apart with a spatula. Drain any excess fat.
- Add the diced onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion is translucent.
- Stir in the chili powder, cumin, paprika, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.
- Remove the skillet from heat and stir in the refried beans until well combined.
- Preheat your oven to 350°F.
- Lay a tortilla flat on a clean surface. Spoon a generous amount of the meat and bean mixture down the center of the tortilla, then sprinkle with a little cheese. Roll the tortilla tightly around the filling and place it seam-side down in a greased 9×13 inch baking dish. Repeat with the remaining tortillas.
- Pour the enchilada sauce evenly over the top of the rolled burritos, then sprinkle the remaining cheese on top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let cool for a few minutes. Serve topped with sour cream and cilantro if desired.
Notes
- For a vegetarian option, substitute the ground meat with black beans or lentils.
- Add diced bell peppers or jalapeños to the meat mixture for extra flavor and heat.
