Description

Ingredients

  • 1 pound Italian sausage (mild or spicy, your choice)
  • 1 tablespoon olive oil
  • 1 bell pepper, diced (any color)
  • 1 medium onion, chopped
  • 2 cups zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  2. Once the sausage is cooked through, add the chopped onion and bell pepper to the skillet. Sauté for about 3-4 minutes until the vegetables start to soften.
  3. Stir in the zucchini, cherry tomatoes, minced garlic, Italian seasoning, salt, and pepper. Cook for an additional 5-7 minutes, or until the zucchini is tender and the tomatoes are slightly blistered.
  4. Taste and adjust seasoning if necessary. Remove from heat and garnish with fresh parsley before serving.
