Ingredients
- 1 pound Italian sausage (mild or spicy, your choice)
- 1 tablespoon olive oil
- 1 bell pepper, diced (any color)
- 1 medium onion, chopped
- 2 cups zucchini, sliced
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Once the sausage is cooked through, add the chopped onion and bell pepper to the skillet. Sauté for about 3-4 minutes until the vegetables start to soften.
- Stir in the zucchini, cherry tomatoes, minced garlic, Italian seasoning, salt, and pepper. Cook for an additional 5-7 minutes, or until the zucchini is tender and the tomatoes are slightly blistered.
- Taste and adjust seasoning if necessary. Remove from heat and garnish with fresh parsley before serving.
Notes
- For a lower-carb option, substitute the zucchini with cauliflower rice.
- Add a splash of balsamic vinegar or a sprinkle of red pepper flakes for extra flavor and heat.
