Ingredients
For the Skillet:
- 1 pound boneless, skinless chicken thighs or breasts
- 2 medium sweet potatoes, peeled and diced into small cubes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- Salt and freshly ground black pepper, to taste
- 1 teaspoon fresh thyme or rosemary, chopped (optional)

Instructions
- Season and Sear the Chicken
- In a small bowl, combine paprika, cumin, salt, and black pepper.
- Rub this spice mixture evenly over the chicken pieces.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the seasoned chicken and sear for 4-5 minutes on each side until golden brown. Remove from skillet and set aside.
- Sauté the Sweet Potatoes and Aromatics
- In the same skillet, add the remaining 1 tablespoon of olive oil.
- Add the diced sweet potatoes and cook for 7-10 minutes, stirring occasionally, until they begin to caramelize and soften.
- Stir in the chopped onion and minced garlic. Sauté for an additional 2-3 minutes until the onion becomes translucent and fragrant.
- Combine and Simmer
- Return the seared chicken to the skillet, nestling it among the sweet potatoes and onions.
- Reduce the heat to medium, cover the skillet, and cook for 5-7 minutes, or until the chicken is fully cooked (internal temperature of 165°F) and the sweet potatoes are tender.
- If using fresh herbs, sprinkle them over the dish during the last few minutes of cooking.
- Serve
- Remove the skillet from heat.
- Serve warm, garnished with additional fresh herbs and a squeeze of lemon juice, if desired.
