Ingredients

For the Skillet:

  • 1 pound boneless, skinless chicken thighs or breasts
  • 2 medium sweet potatoes, peeled and diced into small cubes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon fresh thyme or rosemary, chopped (optional)

Instructions

  1. Season and Sear the Chicken
    • In a small bowl, combine paprika, cumin, salt, and black pepper.
    • Rub this spice mixture evenly over the chicken pieces.
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
    • Add the seasoned chicken and sear for 4-5 minutes on each side until golden brown. Remove from skillet and set aside.
  2. Sauté the Sweet Potatoes and Aromatics
    • In the same skillet, add the remaining 1 tablespoon of olive oil.
    • Add the diced sweet potatoes and cook for 7-10 minutes, stirring occasionally, until they begin to caramelize and soften.
    • Stir in the chopped onion and minced garlic. Sauté for an additional 2-3 minutes until the onion becomes translucent and fragrant.
  3. Combine and Simmer
    • Return the seared chicken to the skillet, nestling it among the sweet potatoes and onions.
    • Reduce the heat to medium, cover the skillet, and cook for 5-7 minutes, or until the chicken is fully cooked (internal temperature of 165°F) and the sweet potatoes are tender.
    • If using fresh herbs, sprinkle them over the dish during the last few minutes of cooking.
  4. Serve
    • Remove the skillet from heat.
    • Serve warm, garnished with additional fresh herbs and a squeeze of lemon juice, if desired.
