Ingredients

Instructions
- Prepare the Eggplant: Preheat your oven to 200°C (392°F) and line a baking tray with parchment paper. Slice the eggplant into 1 cm thick rounds. Arrange the slices on the baking tray in a single layer. Brush both sides of each slice with olive oil and season generously with salt, black pepper, oregano, and paprika.
- Bake the Eggplant: Bake the eggplant slices in the preheated oven for 20–25 minutes or until tender and lightly golden. Once baked, set them aside to cool slightly.
- Prepare the Scrambled Egg Topping: In a bowl, whisk the eggs with a pinch of salt and black pepper. Heat olive oil in a pan over medium heat. Add the minced garlic and sauté until fragrant. Pour the whisked eggs into the pan and scramble until fully cooked. Remove from heat.
- Assemble the Dish: Spread a thin layer of mayonnaise on each baked eggplant slice. Add a spoonful of the scrambled egg mixture on top of each slice. Place a slice of tomato over the eggs and sprinkle generously with grated Parmesan cheese.
