  • 3 tablespoons mayonnaise
  • 1 tomato, sliced
  • 50 grams Parmesan cheese, grated

Instructions

  1. Prepare the Eggplant: Preheat your oven to 200°C (392°F) and line a baking tray with parchment paper. Slice the eggplant into 1 cm thick rounds. Arrange the slices on the baking tray in a single layer. Brush both sides of each slice with olive oil and season generously with salt, black pepper, oregano, and paprika.
  2. Bake the Eggplant: Bake the eggplant slices in the preheated oven for 20–25 minutes or until tender and lightly golden. Once baked, set them aside to cool slightly.
  3. Prepare the Scrambled Egg Topping: In a bowl, whisk the eggs with a pinch of salt and black pepper. Heat olive oil in a pan over medium heat. Add the minced garlic and sauté until fragrant. Pour the whisked eggs into the pan and scramble until fully cooked. Remove from heat.
  4. Assemble the Dish: Spread a thin layer of mayonnaise on each baked eggplant slice. Add a spoonful of the scrambled egg mixture on top of each slice. Place a slice of tomato over the eggs and sprinkle generously with grated Parmesan cheese.
  5. Final Bake: Return the assembled eggplant slices to the oven. Bake for 5–7 minutes or until the Parmesan cheese is melted and bubbly.
