Ingredients

For the Potatoes:

  • 800 grams of potatoes

  • 40 grams of butter

For the Mushroom Filling:

  • 2 tablespoons of vegetable oil
  • 1 onion, finely chopped
  • 4 cloves of garlic, minced
  • 500 grams of mushrooms, sliced
  • 3 tablespoons of dry wine
  • 1/2 teaspoon of salt
  • 1/3 teaspoon of black pepper

For the Sauce:

  • 300 ml of milk
  • 60 grams of butter
  • 1 teaspoon of potato seasoning
  • A bunch of parsley, chopped

Instructions

1. Prepare the Potatoes

  • Peel and cut the potatoes into medium-sized chunks.
  • Place the potatoes in a large pot, cover with water, and add a pinch of salt.
  • Bring the water to a boil and cook the potatoes for 15–20 minutes, or until tender.
  • Drain the potatoes and set aside.

2. Sauté the Aromatics

  • Heat 2 tablespoons of vegetable oil in a large skillet over medium heat.
  • Add the finely chopped onion and sauté for about 5 minutes, until it turns translucent.
  • Stir in the minced garlic and cook for another 2 minutes, letting its aroma infuse the oil.

3. Cook the Mushrooms

  • Add the sliced mushrooms to the skillet. Cook for 8–10 minutes, stirring occasionally, until the mushrooms release their moisture and start to brown.
  • Pour in the dry wine, and season with salt and black pepper.
  • Simmer for 2–3 minutes, allowing the wine to blend with the mushrooms.

4. Combine and Season

  • Add the cooked potatoes to the skillet with the mushrooms.
  • Pour in the milk and add 60 grams of butter. Stir until the butter melts, creating a creamy sauce.
  • Sprinkle in the potato seasoning and mix everything thoroughly to coat the potatoes and mushrooms.

5. Finish with Fresh Herbs

  • Stir in the chopped parsley to add a burst of freshness.
  • Adjust the seasoning with additional salt and pepper to taste.

6. Serve

  • Transfer the savory mushroom and potato mixture to a serving dish.
