Ingredients

  • 500 g potatoes, sliced
  • 300 g chicken thighs (3 medium-sized pieces)
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • Salt, to taste
  • Black pepper, to taste
  • Sweet pepper, to taste
  • 200 g cream
  • 200 g water
  • Parsley, chopped (for garnish)
  • Dill, chopped (for garnish)

Instructions

  • Season the Chicken:

    • Start by seasoning the chicken thighs with salt, black pepper, and sweet pepper on both sides.
  • Cook the Chicken:

    • Heat a large skillet over medium heat and drizzle a little oil.
    • Place the chicken thighs in the skillet and cook for about 4-5 minutes per side, until browned.
    • Remove the chicken from the skillet and set it aside.
  • Sauté the Vegetables:

    • In the same skillet, add the sliced onions and bell peppers.
    • Stir them over medium heat until they become soft and fragrant.
  • Add the Potatoes:

    • Add the sliced potatoes to the skillet.
    • Season with salt and black pepper to taste.
    • Stir everything together, cooking the potatoes for about 5 minutes until they start to soften.
  • Combine and Simmer:

    • Return the browned chicken thighs to the skillet, placing them on top of the potatoes.
    • Pour in the cream and water, ensuring the chicken and potatoes are partially submerged.
    • Lower the heat and let the dish simmer for 20-25 minutes, until the potatoes are tender and the chicken is cooked through.
  • Garnish and Serve:

    • Remove the skillet from heat.
    • Garnish with freshly chopped parsley and dill for added freshness.
    • Serve hot and enjoy this hearty, comforting dish!

Notes

  • Customizable Vegetables: You can add mushrooms, zucchini, or even carrots for variety.
  • Don’t Overcook the Chicken: If using chicken breasts instead of thighs, reduce cooking time to prevent dryness.
  • Storage Tips: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stove or in the microwave.
  • Lighten the Sauce: For a lighter version, substitute the cream with half-and-half or unsweetened almond milk.
