Ingredients

  • 700 grams phyllo dough
  • 600 grams feta cheese (crumbled)
  • 100 grams yogurt
  • 150 ml carbonated water
  • 150 ml cooking oil
  • 60 grams butter (melted)
  • 30 ml olive oil
  • 3 whole eggs
  • 2 egg yolks

Instructions

  • Prepare the Feta Mixture

    • In a large bowl, crumble the feta cheese.
    • Add the yogurt and mix until smooth and creamy.
  • Prepare the Liquid Mixture

    • In a separate bowl, whisk together the carbonated water, cooking oil, and olive oil.
  • Preheat and Prep the Baking Dish

    • Preheat your oven to 180°C (350°F).
    • Grease a baking dish with a bit of cooking oil.
  • Layer the Phyllo Dough

    • Lay a sheet of phyllo dough in the greased baking dish.
    • Brush it lightly with the liquid mixture.
    • Repeat the process, layering and brushing each sheet, until half of the phyllo dough is used.
  • Add the Feta Mixture

    • Evenly spread the feta and yogurt mixture over the layered phyllo dough.
  • Top with Remaining Phyllo Dough

    • Layer the remaining phyllo dough sheets on top, brushing each sheet with the liquid mixture.
  • Add the Egg Mixture

    • In a small bowl, beat the whole eggs and egg yolks together.
    • Pour the egg mixture evenly over the top layer of phyllo dough.
  • Bake

    • Drizzle the melted butter over the top layer.
    • Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and crispy.
  • Serve

    • Let the bake cool slightly for 5-10 minutes.
    • Cut into squares or slices and serve warm.
