Ingredients
- 700 grams phyllo dough
- 600 grams feta cheese (crumbled)
- 100 grams yogurt
- 150 ml carbonated water
- 150 ml cooking oil
- 60 grams butter (melted)
- 30 ml olive oil
- 3 whole eggs
- 2 egg yolks

Prepare the Feta Mixture
- In a large bowl, crumble the feta cheese.
- Add the yogurt and mix until smooth and creamy.

Prepare the Liquid Mixture
- In a separate bowl, whisk together the carbonated water, cooking oil, and olive oil.

Preheat and Prep the Baking Dish
- Preheat your oven to 180°C (350°F).
- Grease a baking dish with a bit of cooking oil.

- Lay a sheet of phyllo dough in the greased baking dish.

- Repeat the process, layering and brushing each sheet, until half of the phyllo dough is used.

- Layer the remaining phyllo dough sheets on top, brushing each sheet with the liquid mixture.

- In a small bowl, beat the whole eggs and egg yolks together.
- Pour the egg mixture evenly over the top layer of phyllo dough.

- Drizzle the melted butter over the top layer.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and crispy.
