  • 1 cup canned diced tomatoes, drained
  • 1 pound shrimp, peeled and deveined
  • 1 pound mussels, cleaned and debearded
  • 1 cup frozen peas
  • Salt and pepper to taste
  • 1 lemon, cut into wedges
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large skillet or paella pan, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and diced red bell pepper, cooking for an additional 2-3 minutes until softened.
  3. Add the smoked paprika and saffron threads, stirring to combine. Cook for 1 minute to release the flavors.
  4. Stir in the Arborio rice, ensuring each grain is coated with the oil and spices. Cook for about 2 minutes, stirring frequently.
  5. Pour in the seafood stock and add the drained diced tomatoes. Bring to a gentle simmer and season with salt and pepper.
  6. Reduce the heat to low and cover the pan. Cook for 15 minutes without stirring.
  7. After 15 minutes, add the shrimp and mussels, pressing them gently into the rice. Cover and cook for another 5-7 minutes until the shrimp are pink and the mussels have opened.
  8. Stir in the frozen peas and cook for an additional 2 minutes. Remove from heat and let it sit, covered, for 5 minutes.
  9. Garnish with fresh parsley and serve with lemon wedges on the side.
