Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon smoked paprika

- 1 1/2 cups Arborio rice
- 4 cups seafood stock (or chicken stock)
- 1 cup canned diced tomatoes, drained
- 1 pound shrimp, peeled and deveined
- 1 pound mussels, cleaned and debearded
- 1 cup frozen peas
- Salt and pepper to taste
- 1 lemon, cut into wedges
- Fresh parsley, chopped for garnish
Instructions
- In a large skillet or paella pan, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and diced red bell pepper, cooking for an additional 2-3 minutes until softened.
- Add the smoked paprika and saffron threads, stirring to combine. Cook for 1 minute to release the flavors.
- Stir in the Arborio rice, ensuring each grain is coated with the oil and spices. Cook for about 2 minutes, stirring frequently.
- Pour in the seafood stock and add the drained diced tomatoes. Bring to a gentle simmer and season with salt and pepper.
- Reduce the heat to low and cover the pan. Cook for 15 minutes without stirring.
- After 15 minutes, add the shrimp and mussels, pressing them gently into the rice. Cover and cook for another 5-7 minutes until the shrimp are pink and the mussels have opened.
- Stir in the frozen peas and cook for an additional 2 minutes. Remove from heat and let it sit, covered, for 5 minutes.
- Garnish with fresh parsley and serve with lemon wedges on the side.
