Description

A nostalgic and fun St. Patrick’s Day treat, these shamrock-shaped homemade gummies are sweet, chewy, and coated with sugar for a sparkling finish. Perfect for parties, classroom snacks, or gifting!

Ingredients

  • 1 ½ cups applesauce
  • 2 ¼ cups sugar (plus extra for coating)
  • 2 (3 oz) boxes lime Jell-O
  • 2 packs unflavored gelatin
  • Shamrock-shaped cookie cutter

Instructions

  1. Heat and Combine: In a saucepan over medium-high heat, mix all ingredients and stir continuously until the mixture comes to a boil. Let it boil for one minute.
  2. Set the Base: Remove from heat and pour into a parchment-lined 13×9 baking dish for easy removal.
  3. Chill to Perfection: Refrigerate for two hours or until fully set.
  4. Cut Out the Fun: Once firm, dust the top with sugar and use a shamrock cookie cutter to create festive shapes.
  5. Prevent Sticking: Dip the cutter in sugar after each cut, then roll the gummies in sugar to coat the sides and bottom.
  6. Store and Enjoy: Keep refrigerated for up to two weeks to maintain freshness!

Notes

  • Swap lime Jell-O for other flavors to customize colors and tastes.
  • Roll gummies in powdered sugar instead of granulated sugar for a softer coating.
  • Store in an airtight container to prevent sticking.
