Ingredients

  • 1 1/2 cups graham cracker crumbs (or Oreo cookie crumbs for variation)
  • 1/4 cup melted butter
  • 1 (3.4 oz) package instant vanilla pudding mix
  • 1 cup cold milk
  • 1/2 teaspoon mint extract (or to taste)
  • Green food coloring (a few drops for desired color)
  • 8 oz Cool Whip or stabilized whipped cream
  • Optional mix-ins: mini chocolate chips, crushed peppermint candies
  • Whipped cream and maraschino cherries for garnish
  • Green sprinkles or sanding sugar for decoration

Instructions

  1. Prepare the Crust:
    • In a bowl, mix graham cracker crumbs with melted butter until well combined.
    • Press the mixture into a 9-inch pie pan and chill in the refrigerator for 10-15 minutes to set.
  2. Make the Filling:
    • In a large bowl, whisk together instant vanilla pudding mix and cold milk until smooth and thickened.
    • Add mint extract and green food coloring, stirring until the desired shade of green is achieved.
    • Gently fold in Cool Whip (or whipped cream) until fully combined.
    • If adding mix-ins like chocolate chips or crushed candies, stir them in at this stage.
  3. Assemble the Pie:
    • Pour the filling into the prepared crust and smooth the top with a spatula.
    • Cover with plastic wrap and freeze for at least 6 hours or overnight for a firm texture.
  4. Garnish & Serve:
    • Before serving, top with whipped cream and garnish with maraschino cherries.
    • Sprinkle with green sprinkles or sanding sugar for a festive touch.
    • Let the pie sit at room temperature for 5-10 minutes before slicing.
