Shamrock Shake Pie is a no-bake, minty dessert inspired by the classic seasonal milkshake. With a creamy, vanilla-mint filling and a crisp graham cracker crust, this festive pie is perfect for St. Patrick’s Day, Christmas, or any occasion that calls for a cool and refreshing treat.
Ingredients
- 1 1/2 cups graham cracker crumbs (or Oreo cookie crumbs for variation)
- 1/4 cup melted butter
- 1 (3.4 oz) package instant vanilla pudding mix
- 1 cup cold milk
- 1/2 teaspoon mint extract (or to taste)
- Green food coloring (a few drops for desired color)
- 8 oz Cool Whip or stabilized whipped cream
- Optional mix-ins: mini chocolate chips, crushed peppermint candies
- Whipped cream and maraschino cherries for garnish
- Green sprinkles or sanding sugar for decoration
Instructions
- Prepare the Crust:
- In a bowl, mix graham cracker crumbs with melted butter until well combined.
- Press the mixture into a 9-inch pie pan and chill in the refrigerator for 10-15 minutes to set.
- Make the Filling:
- In a large bowl, whisk together instant vanilla pudding mix and cold milk until smooth and thickened.
- Add mint extract and green food coloring, stirring until the desired shade of green is achieved.
- Gently fold in Cool Whip (or whipped cream) until fully combined.
- If adding mix-ins like chocolate chips or crushed candies, stir them in at this stage.
- Assemble the Pie:
- Pour the filling into the prepared crust and smooth the top with a spatula.
- Cover with plastic wrap and freeze for at least 6 hours or overnight for a firm texture.
- Garnish & Serve:
- Before serving, top with whipped cream and garnish with maraschino cherries.
- Sprinkle with green sprinkles or sanding sugar for a festive touch.
- Let the pie sit at room temperature for 5-10 minutes before slicing.
