Ingredients

For the Vanilla Mint Cookies:

  • 1 box white or Funfetti cake mix
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Green food coloring

For the Creamy Mint Filling:

  • 1/2 cup butter, softened
  • 1 jar (7 oz) marshmallow cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon mint extract
  • 2 cups powdered sugar
  • 12 tablespoons milk

Instructions

  1. Bake the Cookies
    • Preheat the oven to 350°F and line a baking sheet with parchment paper.
    • In a large bowl, mix the cake mix, butter, eggs, vanilla extract, and green food coloring until well combined.
    • Scoop tablespoon-sized portions onto the baking sheet, spacing them about 2 inches apart.
    • Bake for 8-10 minutes or until the edges are set but still soft in the center. Let cool completely.
  2. Make the Mint Filling
    • In a mixing bowl, beat the butter and marshmallow cream together until smooth.
    • Add the vanilla and mint extracts, then gradually mix in powdered sugar and milk until a fluffy consistency is reached.
  3. Assemble the Whoopie Pies
    • Pipe or spread the filling onto the bottom of half of the cookies.
    • Top with the remaining cookies to create a sandwich.
