Ingredients
For the Vanilla Mint Cookies:
- 1 box white or Funfetti cake mix
- 1/2 cup butter, softened
- 2 eggs
- 1 teaspoon vanilla extract
- Green food coloring
For the Creamy Mint Filling:
- 1/2 cup butter, softened
- 1 jar (7 oz) marshmallow cream
- 1 teaspoon vanilla extract
- 1/2 teaspoon mint extract
- 2 cups powdered sugar
- 1–2 tablespoons milk
Instructions
- Bake the Cookies
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix the cake mix, butter, eggs, vanilla extract, and green food coloring until well combined.
- Scoop tablespoon-sized portions onto the baking sheet, spacing them about 2 inches apart.
- Bake for 8-10 minutes or until the edges are set but still soft in the center. Let cool completely.
- Make the Mint Filling
- In a mixing bowl, beat the butter and marshmallow cream together until smooth.
- Add the vanilla and mint extracts, then gradually mix in powdered sugar and milk until a fluffy consistency is reached.
- Assemble the Whoopie Pies
- Pipe or spread the filling onto the bottom of half of the cookies.
- Top with the remaining cookies to create a sandwich.
Notes
- For a mint-chocolate twist, add mini chocolate chips to the cookie batter.
- Roll the edges in green or gold sprinkles for extra festive flair.
