A flavorful recipe for shrimp served with a creamy Mexican street corn sauce, perfect for a delicious meal.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup crumbled cotija cheese
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/4 cup chopped fresh cilantro
Instructions
- In a large bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and pepper. Let marinate for 15 minutes.
- While the shrimp is marinating, prepare the Mexican street corn sauce by combining corn, mayonnaise, sour cream, cotija cheese, lime juice, chili powder, and half of the chopped cilantro in a medium bowl. Mix well and set aside.
- Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side, or until they are pink and opaque.
- Remove the skillet from heat and stir in the remaining cilantro.
- To serve, place the shrimp on a plate and generously spoon the Mexican street corn sauce over the top.
Notes
- For added flavor, grill the shrimp instead of pan-searing them for a smoky taste.
- You can substitute the cotija cheese with feta cheese if unavailable.
- For a spicy kick, add diced jalapeños to the corn sauce.
