Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup crumbled cotija cheese
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and pepper. Let marinate for 15 minutes.
  2. While the shrimp is marinating, prepare the Mexican street corn sauce by combining corn, mayonnaise, sour cream, cotija cheese, lime juice, chili powder, and half of the chopped cilantro in a medium bowl. Mix well and set aside.
  3. Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side, or until they are pink and opaque.
  4. Remove the skillet from heat and stir in the remaining cilantro.
  5. To serve, place the shrimp on a plate and generously spoon the Mexican street corn sauce over the top.

  • For added flavor, grill the shrimp instead of pan-searing them for a smoky taste.
  • You can substitute the cotija cheese with feta cheese if unavailable.
