Shrimp Orzo is a one-pot wonder that combines tender shrimp, creamy orzo pasta, and vibrant asparagus with fresh lemon and Parmesan. This quick and elegant dish is perfect for a busy weeknight or a special dinner, offering a balance of flavors and textures in every bite.
Ingredients
For the Shrimp:
- Large raw shrimp (peeled and deveined) – 1 ¼ lbs (31–35 count)
- Ground black pepper – ½ tsp
- Kosher salt – ¼ tsp
For the Orzo:
- Extra-virgin olive oil – 1 tbsp
- Yellow onion, diced – 1 small
- Garlic, minced – 3 cloves
- Whole wheat orzo pasta – 8 oz
- Reduced-sodium chicken broth – 2 ½ cups
For the Add-Ins and Toppings:
- Asparagus, trimmed and cut into 2-inch pieces – 1 lb
- Lemon, zest and juice – 1 large (¼ cup juice)
- Parmesan cheese, grated – ½ cup, divided
- Fresh parsley, chopped – 2 tbsp, plus extra for garnish
- Lemon wedges – For serving
Instructions
- Prepare the Shrimp
- In a bowl, toss the shrimp with black pepper and salt. Set aside.
- Cook the Aromatics and Orzo
- Heat olive oil in a large oven-proof skillet or Dutch oven over medium heat.
- Add diced onion and sauté until soft and translucent, about 3–4 minutes.
- Stir in minced garlic and cook until fragrant, about 30 seconds.
- Add orzo, increase heat to medium-high, and toast for 2 minutes, stirring frequently until lightly browned.
- Simmer the Orzo
- Pour in chicken broth and bring to a boil. Stir to loosen any bits stuck to the pan.
- Cover with a tight-fitting lid, reduce heat to low, and simmer for 5 minutes. Stir halfway through to prevent sticking.
- Add Asparagus
- Stir in the asparagus pieces. Cover and continue simmering for 10 minutes, or until the orzo is tender and slightly al dente. The mixture should still be slightly saucy.
- Incorporate Lemon and Cheese
- Stir in lemon zest, lemon juice, ¼ cup Parmesan, and chopped parsley.
- Add Shrimp and Bake
- Preheat oven to 400°F (200°C).
- Arrange the seasoned shrimp on top of the orzo mixture. Sprinkle with the remaining ¼ cup Parmesan.
- Bake, uncovered, for 8–10 minutes, or until shrimp are pink, firm, and opaque.
- Serve and Garnish
- Remove from the oven and sprinkle with additional parsley.
- Serve immediately with lemon wedges on the side for an extra burst of freshness.
