Ingredients

  • 8 ounces linguine or spaghetti
  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 1 pound sea scallops, patted dry
  • 3 cloves garlic, minced
  • 1 pint cherry tomatoes, halved
  • 1/2 cup white wine (or chicken broth)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the linguine or spaghetti according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and scallops, seasoning with salt and pepper. Cook for about 2-3 minutes on each side until they are opaque and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook for 3-4 minutes until they start to soften.
  4. Pour in the white wine (or chicken broth) and add the red pepper flakes if using. Let it simmer for 2-3 minutes to reduce slightly.
  5. Return the shrimp and scallops to the skillet, along with the cooked pasta. Toss everything together, adding reserved pasta water as needed to create a light sauce.
  6. Stir in the fresh basil and adjust seasoning with salt and pepper. Serve hot, topped with grated Parmesan cheese.

Notes

  • For a creamier sauce, add 1/2 cup of heavy cream to the skillet after the wine has reduced.
  • For a veggie boost, toss in some spinach or arugula just before serving, allowing it to wilt slightly.
