Description
A delightful seafood pasta dish featuring shrimp and scallops in a creamy sauce, perfect for a special dinner.
Ingredients
- 8 ounces spaghetti or linguine
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1 cup cherry tomatoes, halved
- 1/2 cup white wine (or chicken broth)
- 1/2 pound shrimp, peeled and deveined
- 1/2 pound scallops
- 1/2 cup heavy cream
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Begin by boiling a pot of salted water and cooking the spaghetti or linguine until it reaches an al dente texture. Once done, drain the pasta, making sure to save about half a cup of the cooking water for later use.
- In a large skillet, warm the olive oil over medium heat. Add in the minced garlic and red pepper flakes, stirring for about a minute until the garlic becomes fragrant and golden.
- Introduce the halved cherry tomatoes to the skillet, allowing them to sauté for 3-4 minutes until they soften and release their juices.
- Next, pour in the white wine (or chicken broth) and let it simmer for a couple of minutes to reduce slightly, enhancing the flavors.
- Carefully add the shrimp and scallops to the mixture, cooking them for 3-4 minutes until the shrimp turn pink and the scallops are no longer translucent.
- Pour in the heavy cream, stirring well to combine. If the sauce appears too thick, gradually incorporate the reserved pasta water until you achieve your preferred consistency.
- Gently fold in the cooked pasta along with the chopped parsley, ensuring everything is well-coated. Season with salt and pepper to your liking.
- Serve the dish hot, generously sprinkled with grated Parmesan cheese for a delightful finish.
Notes
- For a lighter option, swap the heavy cream for half-and-half or a plant-based alternative.
- Consider adding a splash of lemon juice or zest just before serving to brighten the dish.
- Feel free to incorporate your favorite vegetables, like spinach or bell peppers, for an extra nutritional boost.
