Ingredients

  • 56 potatoes, thinly sliced (for the bake)
  • 56 potatoes, peeled and cubed (for the mash)
  • 300 grams of bacon, chopped
  • 100 grams of butter, divided
  • 56 cloves of garlic, minced
  • Milk or cream (as needed for mashing)
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

Step 1: Prepare the Potatoes

  • Preheat your oven to 200°C (400°F).
  • For the bake, wash and thinly slice 5-6 potatoes evenly, about 1/8 inch thick. Peeling is optional.
  • For the mash, peel and cube 5-6 potatoes. Add them to a pot of salted water and boil until fork-tender (15-20 minutes).

Step 2: Cook the Bacon and Garlic

  • In a skillet over medium heat, fry the chopped bacon until crispy.
  • Add the minced garlic to the bacon and sauté for 1-2 minutes until fragrant.
  • Remove from heat and divide the mixture in half: one half for the potato bake and the other for the mashed potatoes.

Step 3: Assemble and Bake the Crispy Potato Layers

  • Mix 50 grams of melted butter with half of the minced garlic.
  • Grease a baking dish with butter or oil.
  • Layer the thinly sliced potatoes in the dish, alternating with the bacon-garlic mixture. Drizzle garlic butter over each layer and season with salt and pepper.
  • Finish with a top layer of bacon. Cover the dish with foil and bake for 30-35 minutes.
  • Remove the foil and bake for an additional 10-15 minutes until golden and crispy.

Step 4: Make the Creamy Mashed Potatoes

  • Drain the boiled potatoes and return them to the pot.
  • Add the remaining 50 grams of butter and mash until smooth.
