Description
A delicious and easy-to-make strawberry cheesecake topped with fresh strawberries.
Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup granulated sugar, divided
- 2 (8-ounce) packages cream cheese, softened
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 2 cups fresh strawberries, hulled and sliced
- 2 tablespoons strawberry jam (optional)
Instructions
- Preheat the oven to 325°F (160°C).
- In a medium bowl, combine graham cracker crumbs, melted butter, and ¼ cup of sugar. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with the remaining ¾ cup of sugar until smooth and creamy.
- Add the vanilla extract and mix well. Then, add the eggs one at a time, mixing on low speed until just combined after each addition.
- Stir in the sour cream until smooth. Pour the cheesecake batter over the cooled crust in the springform pan.
- Bake for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, or overnight for best results.
- Before serving, top the cheesecake with fresh sliced strawberries and drizzle with strawberry jam if desired.
Notes
- For a chocolate twist, add ½ cup of cocoa powder to the cream cheese mixture for a chocolate cheesecake.
- Substitute the fresh strawberries with other berries like blueberries or raspberries for a mixed berry cheesecake.
