Description

A delicious and easy-to-make strawberry cheesecake topped with fresh strawberries.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar, divided
  • 2 (8-ounce) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons strawberry jam (optional)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and ¼ cup of sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with the remaining ¾ cup of sugar until smooth and creamy.
  5. Add the vanilla extract and mix well. Then, add the eggs one at a time, mixing on low speed until just combined after each addition.
  6. Stir in the sour cream until smooth. Pour the cheesecake batter over the cooled crust in the springform pan.
  7. Bake for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  8. Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, or overnight for best results.
  9. Before serving, top the cheesecake with fresh sliced strawberries and drizzle with strawberry jam if desired.
