Brown the Beef:
In a large skillet over medium heat, cook the ground beef, breaking it apart with a spoon. Cook until no longer pink (about 5-7 minutes). Drain excess fat. -
Sauté Aromatics:
Add chopped onion and minced garlic to the skillet. Cook for 3-4 minutes until soft and fragrant. -
Season the Filling:
Stir in cumin, chili powder, paprika, diced green chilies (if using), and salt and pepper. Cook for 2-3 minutes. Add 1/2 cup of enchilada sauce to the beef mixture and remove from heat. -
Prepare the Tortillas:
Lightly heat tortillas in a dry skillet or microwave to prevent cracking. -
Assemble the Enchiladas:
Preheat oven to 375°F (190°C). Spread a thin layer of enchilada sauce on the bottom of a 9×13-inch baking dish. Fill each tortilla with the beef mixture, roll it up, and place it seam-side down in the dish. -
Add Sauce and Cheese:
Pour remaining enchilada sauce over the top and sprinkle generously with shredded cheese. -
Bake:
Cover with foil and bake for 20-25 minutes until the cheese is melted and bubbly. Remove foil and bake for an additional 5 minutes for a crispy top. -
Serve:
