Ingredients
For the Filling:
- 1 lb ground beef
- 1 small onion, diced
- ½ green bell pepper, diced
- 1 cup sloppy joe sauce
- 1 cup shredded cheddar cheese
- 1 cup cooked rice (optional)
For the Burritos:
- 4 large flour tortillas
- 1 tbsp butter or oil for grilling
Instructions
- Prepare the Filling:
- Cook the Ground Beef: In a skillet over medium heat, cook the ground beef, breaking it into crumbles as it browns. Drain excess grease.
- Sauté the Vegetables: Add diced onion and green bell pepper to the skillet. Cook for 3–4 minutes until softened.
- Add the Sauce: Stir in the sloppy joe sauce, let it simmer for 5 minutes until thickened. Remove from heat.
- Assemble the Burritos:
- Layer the Ingredients: Lay each tortilla flat. Spoon a portion of the sloppy joe mixture into the center, top with shredded cheddar cheese, and, if desired, add a scoop of cooked rice.
- Roll the Burrito: Fold in the sides of the tortilla, then roll it tightly from the bottom.
- Grill the Burritos:
- Heat the Skillet: Melt butter or heat oil in a large skillet over medium heat.
- Grill Each Burrito: Place burritos seam-side down in the skillet. Cook for 2–3 minutes on each side until golden and crispy.
- Serve and Enjoy:
- Slice each burrito in half and serve hot. Pair with sour cream, salsa, guacamole, or your favorite dip.
Notes
- Choose Quality Tortillas: Large, pliable tortillas are best for wrapping the filling without tearing.
- Don’t Overfill: Too much filling can make rolling difficult and may cause the burrito to tear.
- Customize with Heat: Add red pepper flakes, jalapeños, or hot sauce for a spicier kick.
- Make Ahead: Assemble the burritos and store them in the fridge for up to 24 hours before grilling.
