A delicious and easy recipe for Slow Cooker Asian Chicken Lettuce Wraps, perfect for a healthy meal.
Ingredients
- 1 pound ground chicken
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon brown sugar
- 1 teaspoon sriracha (optional)
- 1 cup water chestnuts, diced
- 1/2 cup green onions, sliced
- 1 head of butter or iceberg lettuce, leaves separated
Instructions
- In a large skillet, heat the sesame oil and olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Transfer the onion mixture to the slow cooker.
- Add the ground chicken, soy sauce, hoisin sauce, rice vinegar, brown sugar, and sriracha (if using).
- Pour in the diced water chestnuts and stir to combine all ingredients.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is cooked through.
- Once cooked, stir in the sliced green onions.
- To serve, spoon the chicken mixture into the lettuce leaves, wrap them up, and enjoy!
Notes
- For added crunch, top the wraps with chopped peanuts or cashews.
- To make it spicier, increase the amount of sriracha or add red pepper flakes to the chicken mixture.
