These Slow Cooker Garlic Butter Beef Bites feature tender beef cubes, golden Yukon potatoes, and a rich garlic butter sauce. A comforting, hands-off meal perfect for any occasion!
Ingredients
- Ghee or butter – ¼ cup (divided)
- Olive oil – 1 tablespoon
- Yukon gold potatoes – 1 lb, cut into ½-inch cubes
- Garlic cloves (minced) – 3
- Dried thyme – 1 teaspoon
- Dried oregano – ½ teaspoon
- Sea salt – ½ teaspoon (plus to taste)
- Ground black pepper – ¼ teaspoon (plus to taste)
- Sirloin steak – 1¼ lb, cut into ½-inch cubes
Instructions
- Prep Ingredients:
- Measure and prep all ingredients for a smooth cooking process.
- Sear the Potatoes:
- Heat a skillet over medium heat. Add olive oil and half of the ghee.
- Add potatoes, garlic, thyme, oregano, salt, and pepper. Cook for 2–3 minutes without stirring to create a golden crust.
- Stir and cook for an additional 8–10 minutes until fork-tender. Remove from skillet and set aside.
- Sear the Beef:
- Increase skillet heat to medium-high. Add remaining ghee.
- Sear steak cubes for 2 minutes without stirring to achieve a crust. Stir and cook for 1–2 more minutes until browned.
- Transfer to Slow Cooker:
- Transfer seared potatoes and beef to the slow cooker.
- Slow Cook:
- Cover and cook on low for 4–6 hours or high for 2–3 hours, until beef is tender and potatoes are infused with flavor.
- Serve and Garnish:
- Taste and adjust seasoning.
- Garnish with fresh parsley and serve hot.
