Ingredients

  • Ghee or butter – ¼ cup (divided)
  • Olive oil – 1 tablespoon
  • Yukon gold potatoes – 1 lb, cut into ½-inch cubes
  • Garlic cloves (minced) – 3
  • Dried thyme – 1 teaspoon
  • Dried oregano – ½ teaspoon
  • Sea salt – ½ teaspoon (plus to taste)
  • Ground black pepper – ¼ teaspoon (plus to taste)
  • Sirloin steak – 1¼ lb, cut into ½-inch cubes

Instructions

  • Prep Ingredients:
    • Measure and prep all ingredients for a smooth cooking process.
  • Sear the Potatoes:
    • Heat a skillet over medium heat. Add olive oil and half of the ghee.
    • Add potatoes, garlic, thyme, oregano, salt, and pepper. Cook for 2–3 minutes without stirring to create a golden crust.
    • Stir and cook for an additional 8–10 minutes until fork-tender. Remove from skillet and set aside.
  • Sear the Beef:
    • Increase skillet heat to medium-high. Add remaining ghee.
    • Sear steak cubes for 2 minutes without stirring to achieve a crust. Stir and cook for 1–2 more minutes until browned.
  • Transfer to Slow Cooker:
    • Transfer seared potatoes and beef to the slow cooker.
  • Slow Cook:
    • Cover and cook on low for 4–6 hours or high for 2–3 hours, until beef is tender and potatoes are infused with flavor.
  • Serve and Garnish:
    • Taste and adjust seasoning.
    • Garnish with fresh parsley and serve hot.
