Ingredients
- 6 cups mixed salad greens (such as arugula, spinach, and romaine)
- 8 ounces smoked salmon, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, thinly sliced
- 1/4 red onion, thinly sliced
- 1/4 cup capers, rinsed and drained
- 1/4 cup fresh chives, chopped
- 1/2 cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, capers, and half of the chopped chives.
- In a separate small bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, salt, and pepper until smooth and creamy.
- Drizzle the dressing over the salad mixture and toss gently to combine, ensuring all ingredients are coated.
- Arrange the smoked salmon slices on top of the salad.
- Sprinkle the remaining chives over the salad for garnish.
- Serve immediately or chill in the refrigerator for up to 30 minutes before serving for a refreshing taste.
