Description

Sorrento Pasta, also known as Pasta alla Sorrentina, is a delicious Italian dish made with penne pasta, crushed tomatoes, and melted mozzarella cheese, garnished with fresh basil.


Ingredients

  • 8 ounces penne pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1 cup fresh mozzarella cheese, diced
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. Cook the penne pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Stir in the crushed tomatoes, dried oregano, sugar, salt, and pepper. Bring to a simmer and let cook for about 10 minutes, allowing the flavors to meld.
  4. Add the cooked penne pasta to the skillet and toss to coat the pasta evenly with the sauce.
  5. Remove the skillet from heat and gently fold in the diced mozzarella cheese until it begins to melt.
  6. Sprinkle the grated Parmesan cheese on top and place the skillet under the broiler for 2-3 minutes, or until the cheese is bubbly and golden.
  7. Remove from the oven and let cool for a minute. Garnish with fresh basil leaves before serving.

Notes

  • For a spicier version, add a pinch of red pepper flakes to the sauce.
  • You can substitute the penne pasta with any pasta shape you prefer, such as rigatoni or fusilli.
