Description
Sorrento Pasta, also known as Pasta alla Sorrentina, is a delicious Italian dish made with penne pasta, crushed tomatoes, and melted mozzarella cheese, garnished with fresh basil.
Ingredients
- 8 ounces penne pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 can (14.5 ounces) crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon sugar
- Salt and pepper to taste
- 1 cup fresh mozzarella cheese, diced
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- Cook the penne pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Stir in the crushed tomatoes, dried oregano, sugar, salt, and pepper. Bring to a simmer and let cook for about 10 minutes, allowing the flavors to meld.
- Add the cooked penne pasta to the skillet and toss to coat the pasta evenly with the sauce.
- Remove the skillet from heat and gently fold in the diced mozzarella cheese until it begins to melt.
- Sprinkle the grated Parmesan cheese on top and place the skillet under the broiler for 2-3 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let cool for a minute. Garnish with fresh basil leaves before serving.
Notes
- For a spicier version, add a pinch of red pepper flakes to the sauce.
- You can substitute the penne pasta with any pasta shape you prefer, such as rigatoni or fusilli.
