Ingredients

Cornbread Poppers:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 cup sweet corn kernels (fresh or frozen)
  • 1/2 cup shredded cheddar cheese

Honey Butter Topping:

  • 1/4 cup honey
  • 1/4 cup unsalted butter, softened

Instructions

1. Prepare the Oven and Pan:

  • Preheat oven to 400°F (200°C).
  • Grease a mini muffin tin or use silicone molds for easy removal.

2. Mix the Dry Ingredients:

  • In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.

3. Combine the Wet Ingredients:

  • In a separate bowl, whisk together buttermilk, eggs, and melted butter until smooth.

4. Create the Batter:

  • Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Do not overmix.

5. Add Final Touches:

  • Fold in sweet corn kernels and shredded cheddar cheese.

6. Fill and Bake:

  • Spoon batter into the prepared muffin tin, filling each cup about 2/3 full.
  • Bake for 12-15 minutes, or until golden brown and a toothpick inserted comes out clean.

7. Make the Honey Butter:

  • Mix softened butter and honey until smooth and creamy.

8. Finish and Serve:

  • Let poppers cool slightly, then drizzle with honey butter before serving warm.

Notes

  • Use fresh cornmeal for the best flavor.
  • Avoid overmixing to keep the poppers light and fluffy.
  • Preheat the muffin tin for crispier edges.
  • Customize with mix-ins like diced jalapeños, crumbled bacon, or extra cheese.
  • Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
