Description

A delicious and healthy Southwest Chicken Cobb Salad topped with a zesty Chipotle Lime Dressing.


Ingredients

  • 2 cups cooked chicken breast, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 avocado, diced
  • 1 cup black beans, drained and rinsed
  • 1 cup romaine lettuce, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil (for dressing)
  • 2 tablespoons lime juice (for dressing)
  • 1 tablespoon honey (for dressing)
  • 1 teaspoon chipotle powder (for dressing)
  • 1/2 teaspoon garlic powder (for dressing)
  • Salt and pepper to taste (for dressing)

Instructions

  1. In a small bowl, whisk together the olive oil, lime juice, honey, chipotle powder, garlic powder, salt, and pepper until well combined. Set aside.
  2. In a large salad bowl, combine the chopped romaine lettuce, diced chicken, cherry tomatoes, corn, black beans, avocado, red onion, and cilantro.
  3. Drizzle the chipotle lime dressing over the salad and toss gently to combine, ensuring all ingredients are coated.
  4. Sprinkle the crumbled feta cheese on top of the salad.
  5. Serve immediately or chill in the refrigerator for about 30 minutes for the flavors to meld together.

Notes
