Description

Savor the creamy, smoky, and comforting flavors of Spaghetti Carbonara, a timeless Italian classic. With just a handful of ingredients and simple steps, this dish transforms into a luxurious meal that’s perfect for any occasion.

Ingredients

  • 8 ounces spaghetti
  • 2 large eggs
  • ½ cup freshly grated Parmesan cheese
  • 4 slices bacon, diced
  • 4 cloves garlic, minced
  • Kosher salt, to taste
  • Black pepper, freshly ground, to taste
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add spaghetti and cook according to the package instructions (8–10 minutes).
  3. Reserve ½ cup of pasta water before draining.

Step 2: Prepare the Sauce

  1. In a small bowl, whisk together the eggs and Parmesan cheese. Set aside.

Step 3: Cook the Bacon

  1. Heat a large skillet over medium heat.
  2. Add diced bacon and cook until crispy (6–8 minutes).
  3. Remove excess grease, leaving 1–2 tablespoons in the skillet.

Step 4: Sauté Garlic

  1. Add minced garlic to the skillet with bacon.
  2. Cook for about 1 minute, stirring frequently, until fragrant.

Step 5: Combine Pasta and Sauce

  1. Lower the heat to low.
  2. Add cooked spaghetti to the skillet and toss to coat in the bacon fat.
  3. Quickly pour in the egg and Parmesan mixture, tossing continuously to create a creamy sauce.

Step 6: Adjust Sauce Consistency

  1. Gradually add reserved pasta water, 1 tablespoon at a time, until the sauce reaches the desired consistency.
  2. Season with salt and freshly ground black pepper to taste.

Step 7: Serve and Garnish

  1. Plate the pasta and garnish with chopped parsley and additional Parmesan cheese, if desired.
  2. Serve immediately while warm and creamy.

Notes

  • Fresh Parmesan: Always use freshly grated Parmesan for the best flavor and texture.
  • Avoid Scrambling: Toss the egg mixture with the hot pasta off direct heat to avoid scrambling.
  • Pasta Water: Reserved starchy pasta water is essential for binding the sauce.
