Description
A rich and flavorful spiced seafood bisque topped with crispy sesame prawn croutons, perfect for seafood lovers.
Ingredients
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups seafood stock
- 1 cup canned crushed tomatoes
- 1 pound mixed seafood (shrimp, scallops, and fish fillets)
- 1 cup heavy cream
- 2 tablespoons fresh lemon juice
- 1/4 cup fresh parsley, chopped
- 1/2 pound large shrimp, peeled and deveined (for croutons)
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon sesame seeds
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and celery. Sauté for about 5 minutes, until the vegetables are softened.
- Stir in the smoked paprika, cayenne pepper, thyme, salt, and black pepper. Cook for another minute until fragrant.
- Pour in the seafood stock and crushed tomatoes. Bring to a simmer and cook for 15 minutes, allowing the flavors to meld.
- Add the mixed seafood to the pot and cook for an additional 5-7 minutes, or until the seafood is cooked through.
- Stir in the heavy cream and lemon juice. Simmer for another 5 minutes, then remove from heat. Adjust seasoning if necessary.
- For the sesame prawn croutons, in a bowl, combine the shrimp with sesame oil, soy sauce, cornstarch, salt, and pepper. Toss to coat evenly.
- Heat a non-stick skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until golden and cooked through. Sprinkle with sesame seeds during the last minute of cooking.
- Serve the bisque hot, garnished with fresh parsley and topped with sesame prawn croutons.
Notes
- For a spicier kick, add a dash of hot sauce or more cayenne pepper to the bisque.
- Substitute the mixed seafood with your favorite seafood or use only shrimp for a simpler version.
