Ingredients

Wet Ingredients:

  • 2 large eggs
  • 1 cup milk (any kind)

  • 1 1/2 cups oat flour

Add-ins:

Instructions

  • Prepare the Baking Dish
    • Preheat your oven to 375°F (190°C).
    • Lightly grease a 9×9-inch baking dish with cooking spray or olive oil.
  • Mix the Wet Ingredients
    • In a large bowl, whisk together the eggs, milk, and olive oil until smooth.
    • Add the baking powder, salt, and black pepper to the wet mixture and whisk again.
  • Incorporate the Dry Ingredients
    • Gradually add the oat flour to the wet mixture, stirring with a spatula until fully combined. The batter should be slightly thick.
  • Add the Spinach and Fillings
    • Fold in the spinach, crumbled feta, grated Parmigiano Reggiano, chopped green onions, fresh dill, and grated garlic.
    • Stir gently until all ingredients are evenly distributed.
  • Transfer to the Baking Dish
    • Pour the mixture into the prepared baking dish and spread it out evenly with a spatula.
    • Sprinkle extra grated Parmigiano Reggiano on top for a golden, cheesy crust.
  • Bake the Brownies
