Description
Star Spangled Shortcakes are a festive summer dessert featuring layers of fluffy shortcakes, fresh strawberries, blueberries, and whipped cream, perfect for celebrating summer occasions.
Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 2 cups strawberries, hulled and sliced
- 2 cups blueberries
- 1/4 cup powdered sugar
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract (for whipped cream)
Instructions
- Preheat the oven to 425°F. Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
- Pour in the milk and 1 teaspoon of vanilla extract. Stir until just combined, being careful not to overmix.
- Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Pat the dough into a 1-inch thick rectangle.
- Cut out shortcakes using a round biscuit cutter or a glass. Place them on the prepared baking sheet.
- Bake for 12-15 minutes, or until the tops are golden brown. Remove from the oven and let cool slightly.
- While the shortcakes are cooling, prepare the whipped cream. In a medium bowl, beat the heavy whipping cream and 1 teaspoon of vanilla extract with an electric mixer until soft peaks form. Gradually add the powdered sugar and continue to beat until stiff peaks form.
- To assemble, slice each shortcake in half horizontally. Layer the bottom half with strawberries and blueberries, then top with a generous dollop of whipped cream. Place the top half of the shortcake on top and add more berries and whipped cream if desired.
- Serve immediately and enjoy!
Notes
- For a festive touch, you can add a sprinkle of edible glitter on top of the whipped cream.
- Substitute the berries with your favorite seasonal fruits like peaches or raspberries for a different flavor profile.
