Description

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 2 cups strawberries, hulled and sliced
  • 2 cups blueberries
  • 1/4 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract (for whipped cream)

Instructions

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  3. Pour in the milk and 1 teaspoon of vanilla extract. Stir until just combined, being careful not to overmix.
  4. Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Pat the dough into a 1-inch thick rectangle.
  5. Cut out shortcakes using a round biscuit cutter or a glass. Place them on the prepared baking sheet.
  6. Bake for 12-15 minutes, or until the tops are golden brown. Remove from the oven and let cool slightly.
  7. While the shortcakes are cooling, prepare the whipped cream. In a medium bowl, beat the heavy whipping cream and 1 teaspoon of vanilla extract with an electric mixer until soft peaks form. Gradually add the powdered sugar and continue to beat until stiff peaks form.
  8. To assemble, slice each shortcake in half horizontally. Layer the bottom half with strawberries and blueberries, then top with a generous dollop of whipped cream. Place the top half of the shortcake on top and add more berries and whipped cream if desired.
  9. Serve immediately and enjoy!
