Ingredients
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- ½ cup unsalted butter, softened
- 1 cup milk
- 3 large eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 1 cup fresh strawberries, hulled and sliced
- 1 cup fresh mango, diced
- 1 cup whipped cream
- Mint leaves for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking dish by greasing and dusting it with flour.
- In a large bowl, beat the softened butter and sugar together until light and airy.
- Incorporate the eggs one at a time, ensuring each is well blended before adding the next, then mix in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually combine the dry mixture with the wet ingredients, alternating with the milk until just combined.
- Carefully fold in the sliced strawberries and diced mango, ensuring they are evenly distributed throughout the batter.
- Transfer the batter into the prepared baking dish, smoothing the top.
- Bake for approximately 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for about 10 minutes before moving it to a wire rack to cool completely.
- Once cooled, generously spread whipped cream over the top and decorate with extra slices of strawberries, mango, and a sprinkle of mint leaves if desired.
Notes
- For added flavor, mix in a teaspoon of almond extract into the batter.
- Feel free to swap out strawberries and mango for other fruits like blueberries and peaches for a delightful variation.
