Description
Strawberry Mango Split Cake: A Fresh and Fruity Dessert is a delightful cake that combines the sweetness of strawberries and mangoes with a light whipped cream topping, perfect for any occasion.
Ingredients
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- ½ cup unsalted butter, softened
- 1 cup whole milk
- 3 large eggs
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 2 cups fresh strawberries, hulled and sliced
- 2 cups fresh mango, peeled and diced
- 1 cup whipped cream
- ¼ cup powdered sugar
- 1 teaspoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, alternating with the milk. Mix until just combined.
- Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
- While the cakes are cooling, prepare the whipped cream by beating the heavy cream, powdered sugar, and lemon juice in a bowl until soft peaks form.
- Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of whipped cream on top, followed by half of the sliced strawberries and diced mango.
- Place the second cake layer on top and repeat the process with the remaining whipped cream, strawberries, and mango.
- Serve immediately or chill in the refrigerator for 30 minutes before serving for a firmer texture.
Notes
- For a tropical twist, try adding shredded coconut to the whipped cream or topping the cake with toasted coconut flakes.
- You can also substitute the strawberries and mango with other fruits like blueberries and peaches for a different flavor profile.
