Description
Delicious Strawberry Rhubarb Crumb Bars with a sweet and tangy filling, topped with a crumbly oat mixture.
Ingredients
- 2 cups fresh strawberries, hulled and sliced
- 2 cups rhubarb, chopped
- 1 cup granulated sugar, divided
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar, packed
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a medium bowl, combine the strawberries, rhubarb, 1/2 cup of granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir until well mixed and set aside to let the flavors meld for about 10 minutes.
- In another bowl, mix together the flour, oats, brown sugar, baking powder, salt, and the remaining 1/2 cup of granulated sugar. Pour in the melted butter and stir until crumbly.
- Press half of the crumb mixture into the bottom of the prepared baking dish to form a crust.
- Spread the strawberry-rhubarb mixture evenly over the crust. Sprinkle the remaining crumb mixture on top of the fruit filling.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden brown.
- Allow the bars to cool in the pan for at least 30 minutes before cutting into squares.
Notes
- For a twist, try adding a teaspoon of cinnamon to the crumb mixture for extra flavor.
- You can also substitute the strawberries with blueberries or peaches for a different fruit combination.
