Description

Delicious Strawberry Rhubarb Crumb Bars with a sweet and tangy filling, topped with a crumbly oat mixture.


Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar, divided
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a medium bowl, combine the strawberries, rhubarb, 1/2 cup of granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir until well mixed and set aside to let the flavors meld for about 10 minutes.
  3. In another bowl, mix together the flour, oats, brown sugar, baking powder, salt, and the remaining 1/2 cup of granulated sugar. Pour in the melted butter and stir until crumbly.
  4. Press half of the crumb mixture into the bottom of the prepared baking dish to form a crust.
  5. Spread the strawberry-rhubarb mixture evenly over the crust. Sprinkle the remaining crumb mixture on top of the fruit filling.
  6. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown.
  7. Allow the bars to cool in the pan for at least 30 minutes before cutting into squares.

Notes

  • For a twist, try adding a teaspoon of cinnamon to the crumb mixture for extra flavor.
  • You can also substitute the strawberries with blueberries or peaches for a different fruit combination.
