Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 tablespoon olive oil

Filling Options (Choose One or Mix & Match)

Classic Creamy Spinach Filling:

  • 1 cup fresh spinach, chopped
  • ½ cup cream cheese, softened
  • ½ cup shredded mozzarella cheese
  • ¼ teaspoon red pepper flakes (optional)

Bacon and Cheddar Filling:

  • ½ cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 1 tablespoon chopped green onions

Mushroom and Swiss Filling:

  • ½ cup sautéed mushrooms
  • ½ cup shredded Swiss cheese
  • 1 teaspoon dried thyme

Caprese Filling:

  • ½ cup shredded mozzarella
  • ½ cup diced tomatoes
  • 4 fresh basil leaves, chopped

Instructions

  • Preheat the Oven:
Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.

  • Prepare the Chicken:
Using a sharp knife, slice each chicken breast horizontally (but not all the way through) to create a pocket. Be careful not to cut through the other side.

  • Season the Chicken:
Rub the chicken with salt, black pepper, garlic powder, and paprika on both sides.

  • Make the Filling:
In a bowl, mix your chosen filling ingredients until well combined.

  • Stuff the Chicken:
Divide the filling evenly and stuff each chicken breast. Secure the edges with toothpicks if needed.

  • Sear the Chicken (Optional for Extra Flavor):
Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.

  • Bake to Perfection:
Transfer the chicken to the prepared baking dish and bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).

  • Rest and Serve:
Let the chicken rest for 5 minutes before slicing. Remove toothpicks if used, then serve with your favorite side dishes.
