Ingredients 

For the Filling: 

  • 400 g minced meat 
  • 3 tablespoons vegetable oil (15 ml) 
  • 1 onion, finely chopped 
  • 1 carrot, finely chopped 
  • 1 red pepper, finely chopped 
  • 1 green pepper, finely chopped 
  • 2 tomatoes, finely chopped 
  • 1 tablespoon tomato paste (50 g) 
  • 1 teaspoon salt (8 g) 
  • 1 teaspoon red pepper flakes 
  • 1/2 teaspoon black pepper 
  • Parsley, chopped 

For the Crepes (8 crepes): 

  • 3 eggs 
  • 1/2 teaspoon salt (4 g) 
  • 2.5 glasses of milk (500 ml) 
  • 1.5 cups flour (180 g) 

For the Bechamel Sauce: 

  • 1 tablespoon butter (50 g) 
  • 2 tablespoons flour (60 g) 
  • 3 glasses of milk (600 ml) 
  • 1/2 teaspoon black pepper 
  • 1/2 teaspoon salt 

Additional: 

  • 200 g cheddar cheese, gratté 

Instructions: 

  1. Prepare the Filling: 
  • Warm the vegetable oil in a large pan over medium heat. 
  • Toss in the finely diced onion and sauté until it turns translucent. 
  • Add the ground meat and cook until it’s nicely browned. 
  • Stir in the finely chopped carrot, red pepper, and green pepper. Cook for about 5-7 minutes until the vegetables soften. 
  • Add the finely chopped tomatoes and tomato paste. Stir well to combine. 
  • Sprinkle with salt, crushed red pepper, and ground black pepper. 
  • Let the mixture simmer until the tomatoes are cooked down and the flavors meld together. Stir in the chopped parsley and set aside. 
  1. Prepare the Crepes: 
  • In a mixing bowl, beat the eggs with salt. 
  • Pour in the milk gradually, whisking continuously to maintain a smooth consistency. 
  • Heat a non-stick skillet over medium heat and lightly grease it with a bit of vegetable oil. 
  • Pour a small amount of batter into the skillet, tilting it to cover the bottom evenly. 
  • Cook the crepe for a minute or two on each side until it reaches a golden hue. Repeat until all the batter is used up. 
  1. Prepare the Bechamel Sauce: 
  • Heat the butter in a saucepan over medium heat until fully melted. 
  • Add the flour and cook, stirring constantly, until the mixture turns golden and forms a roux. 
  • Gradually add the milk, whisking constantly to keep it smooth. 
  • Cook the sauce, stirring constantly, until it thickens. 
  • Season with black pepper and salt. 
  1. Assemble the Sultan Kebab: 
  • Preheat your oven to 375°F (190°C). 
  • Take each crepe and place a generous spoonful of the meat filling in the center. Roll up the crepe and place it seam-side down in a baking dish. 
  • Repeat with the remaining crepes and filling. 
  • Pour the bechamel sauce over the crepes, spreading it evenly. 
  • Sprinkle the grated cheddar cheese on top. 
  1. Bake: 
  • Put the baking dish in the hot oven and bake for 20-25 minutes, or until the cheese is melted and bubbling. 
  1. Serve: 
  • Take it out of the oven and allow it to sit for a few minutes before serving.
